< Ingredients >
■Nam Phrik Phao (Chile in oil)
・1 red pepper with seed
(※Remove a part of hull of red pepper.)
・3 green chilies with seed
(※Remove a part of hull of green chili.)
・About 5g dried shirimp
・1 garlic clove
・1 block of new ginger 5cm long with skin
(※Cut them into round slices of 1-2mm thick with skin.)
(※About size of of 5cm long new ginger block is about
size of the tip of the thumb.)
・2 shallots
(※Remove a part of green leaf from shallot.)
・1 Tbsp extra virgin olive oil
・About 1 Tbsp nam pla
・About 1 Tsp cayenne pepper
・1 Tbsp palm sugar
・A small quantity of salt
・About 1 Tbsp lime juice
■Tom Yum Soup
・6 shrimps with shell
・A small quantity of sake
・About 4 cups of water
・2-3 Tbsps granular chicken bone broth stock
・3-4 dried kaffir lime leafs
・1 ginger clove new ginger with skin
(※About size of 1 ginger clove is about the size of the
tip of the thumb.)
(※Cut them into round slices of 1-2mm thick with skin.)
・2 green chilies with seed
(※Remove a part of hull of green chili.)
・4-6 red peppers with seed
(※Remove a part of hull of red pepper.)
・About 20 sticks of dried lemongrass
(※Bundle lemongrass up with kite string.)
・1/4 celery
(※Remove strings and slice into thin slices of about
1mm thick.)
・About 1 tsp minced dried cilantro
・1-2 Tbsps nam pla
・About 2 Tbsps homemade Nam Prik Phao
・1-2 Tbsps lime juice(or lemon juice)
(※If you don't have lime juice, lemon juice is used
instead of lime juice.)
・1/2 canned Chinese straw mushroom
(※Cut Chinese straw mushroom into 2 equal parts
lengthwise after throw away water in a can and it is
taken out from a can.)
・1-2 Tsps cayenne pepper
・1-2 Tbsps coconut powder(or coconut milk)
(※If you use coconut milk, the quantity of it is about
1/4-1/3 Tbsp.)
■Garnish
・Favorite amount of minced dried cilantro
・2 cut lime wedges
< Directions >
1.Cut red pepper, green chili, dried shrimp, garlic, new
ginger, shallot into appropriately size pieces and put
them into a mixer(or food processor, hand blender) to
make them into paste form. Pour extra virgin olive oil
in a non stick pan, heat it over medium-high heat. Then
reduce the heat to medium-low heat immediately. After
that, add made past form. And then, saute and stirring
often until made paste form is caramelized while paying
particular attention to prevent burn. Add nam pla,
cayenne pepper, palm sugar, salt, lime juice more to fix
the taste while mixing the whole and finish making the
Nam Phrik phao.
2.Pull off the legs and the shell of shrimps. Chuck out the
legs part and save the shells part. Use a knife to make
a slit along the shrimp's back and lift the vein slightly
using the tip of the knife. Pull the vein out gently with
your hands, and then rinse the shrimp's belly and set
aside. In a bigger deep pan, pour water and add
granular chicken bone stock, shrimp's shell to mix and
once simmering. Remove shrimp's shell from water
mixture. Moreover, add kaffir lime leaf, new ginger,
green chili, red pepper, and lemon grass. And then, boil
them until new ginger is cooked thoroughly and tender.
3.When new ginger become tender, add celery and
minced dried cilantro more and once boiling.
Furthermore, add nam pla, made Nam Phrik Phao in the
step 1 and lime juice to fix the taste. After that, boiling
it once again.
4.Add prepared shrimps and Chinese straw mushrooms.
And boil them while removing the light gray scum.
When shrimps are cooked thoroughly, add cayenne
pepper, coconut powder(or coconut milk). And stew
them once more to finish the cooking of Tom Yam
Soup. Finally serve finished dish in 2 pates. Sprinkle
minced dried cilantro, lime juice on made Tom Yam
Soup according to your preference.
